ECHILADA CASSEROLE
1. corn or flour tortillas (small
pack)
2. onion, mushrooms(canned is ok drained), green peppers ( all are
optional)
3. 1&1/2-2lbs. ground chuck
4. 2 cans refried beans
5.
12oz. cheddar or mozzarrella cheese
6. 1 can ro-tel diced tomatoes
w/green chiles mild(or says nothing)
7. 1 can green chiles(mild)
8. 1 can
cream of chicken soup
9.canned jalapenos and nachos (optional)
Brown beef with choppped peppers, onions and mushrooms, drain.
Line baking dish (at least 11x13 and need deep sprayed w/pam) with
tortillas.
Spread beef over this.
Spread refried beans over this.
Cover
with cheese saving some cheese for top.
Mix cream of chicken soup, tomatoes
and chiles (7,8&9) together and pour over cheese.
Bake at 350 for 1 hour
and remove and sprinkle cheese on top and return to oven at 325 until cheese
melts
Remove and let set for at least 15 minutes before serving
Serve with
nacho chips and jalapenos
